About Me
My name is JC or John Cavalli aka The Wilmington Chef
I have been a Chef for 30 years working in Wales & London, Mostly working in commercial & events.
Since lockdown, My love for cooking over inductions & gas died & I delved into the world of fire cookery, I fell in love with the new natural flavours that cooking over embers reward you with amongst the smokey delights of traditional Texas BBQ, I use all the aspects of these plus my love for street food to design fun & engaging dishes.
